I love dessert. Does anyone not? Apparently those people do exist. I know it’s unbelievable, but my boyfriend is one who isn’t super fond of the sweet stuff. Just yesterday, a friend was telling me how she removed all the chocolates from a heart-shape package and replaced them with slices of salami for her husband! But I need a balance. I have my savory entree, then I need to ease into some decadent, creamy, crunchy, soft, sweet indulgence. Mmm. Am I making you hungry?
There are loads of healtified dessert recipes out there, but this one is my favourite “twist,” on a classic. This past weekend, I was just craving sugar and dessert, but I didn’t want to sacrifice my healthy lifestyle and end up feeling crummy later. Since eating cleaner (i.e. no processed sugar, minimal amount of grassfed dairy, no veggie oils, gluten free, and lots of whole/sustainable food) I notice immediately when I eat food that is, well, crap. We had a potluck at the school last week, Mexican-themed and filled with conventional tortillas, lots of queso dip, tostitos tortilla chips, and processed sugar-laden desserts, and I heartily participated. By the afternoon, I was feeling all kinds of crazy. Moody, angry, frustrated, I had a short temper, I just felt down and irritated! And my day was by no means trying. I should’ve been relaxed, calm, and grateful. It was so instantaneous and nuts. I hadn’t felt that way, such a huge upheaval in emotions, in ages!
With my usual diet, I reflected, I feel light, positive, and very well-lubricated if that makes sense. Thankfully, I returned to this awesomeness the next day. It’s hard to be aware of what a huge impact food can have on your attitude and happiness, until you return to old, unhealthy ways, but this served as a wonderful reminder. So, today I wanted to take a break from beauty stuff and focus on…inner beauty stuff. Like I mentioned in my Going Green Tag, prioritizing beauty and health starts with food before you start investing in natural skincare and cosmetics. If you eat McDonalds 24/7 it won’t matter that the single product you use on your face is organic, raw manuka honey!
And yet, I love dessert.
Certainly, one can have her cake and eat it too?
Of course, all things in moderation i.e. don’t eat a higher percentage of these cookies per day than you do vegetables, but I can chow down on two of these a day without all the yucky side effects. Plus, they are a snap to make! And they don’t include any ingredients that cause my face to break out! Win, win, win!
-1/4 cup palm shortening/grassfed butter
-1/4 coconut sugar
-2 tablespoons honey (I substituted maple syrup because I prefer the flavour)
-1 large egg at room temperature (Mine was def not room temperature…oops)
-2 teaspoons vanilla
-1.5 cups blanched almond flour
-2 tablespoons coconut flour
-1/2 teaspoon baking soda
-1/2 teaspoon sea salt
-1/4 cup dark chocolate chunks
-1/4 cup chocolate chips (the enjoy life brand is great) (basically any chocolate combination of chunks or chips adding up to 1/2 cup is what you need. Go all chunks if you want! Go wild!)

In other news, I totally splurged on Kjaer Weis products as an early birthday gift to myself. I’m so excited for the package to arrive! I also spoke with some of the lovely ladies at SpiritBeautyLounge on the phone for the first time ever today, and it was awesome. It must be out-of-control amazing to work at that office. I am jealous.
