Ah, the sweet tooth. So impossible to deny. But how to satisfy it when avoiding sugar, dairy, gluten, and vegetable oil? I’ve been going kind of paleo you guys. Now, don’t worry. I haven’t joined the “cult” or eschewed beans or anything. I am, however, enjoying my foray into paleo treats. These cookies hit the spot and their innate “healthy” taste is almost indiscernible.

And how about that beautiful sunrise? It’s actually feeling like fall here in the South. The days have become crazy short meaning I start my intermittent morning jogs when it’s still dark out and witness dawn unfolding. It’s extremely uplifting.

 The wet ingredients:
1/2 cup applesauce
      3 T flax meal/1.5 T chia seed meal
           1/2 t guar gum
                 1 T apple cider vinegar
                     12 drops liquid stevia (I used 6)
                          1 t vanilla extract
                             1/4 t sea salt
                                   1/4 cup honey
                                         1/4 cup coconut oil/ghee/butter (I used organic valley pasture butter)

Mix them all together!

Then,
                    mix in the dry ingredients:
1 cup almond meal flour
   1/2 cup coconut flour
         1 t baking soda
            1 t baking powder
               1/3 cup dairy free chocolate chips

Mix those all together too! It should look something like this.

Although, this is before I added the ever important chocolate.

Afterwards, press them into round balls on parchment paper and push flat. These do not expand/change shape while baking. Set oven to 350 degrees and bake for 12-15 minutes-
