Are you ever stressed and then things get more stressful? More and more stuff seems to be piling up from all directions and seemingly from out of nowhere? Is this too dramatic of a tone to begin a post with? Oh boy, it has been one heck of a week and I’ve only had four hours of sleep as I type this. Work has been busy and challenging – though satisfying. It’s all the other stuff that’s got me going nuts. School and obtaining my teacher’s license in English has devolved into a bit of a nightmare. I’m pretty strapped for cash these days, my current job doesn’t pay much and it’s just helping me get by and pay off my car until I’m a certified teacher. I have been mentally preparing myself for forgoing even that small amount of pay in exchange for a semester’s worth of pro bono and required student teaching starting in January. Yes, I’m definitely whining here, but it’s a tough pill to swallow when you’re 24 years old and have real life expenses. Plus, there’s the lack of sleep and all that. Anyways, the latest development? I most likely will have to take two semesters worth of student teaching as the program recently changed and I’m now required to take additional, undergraduate English classes despite my English BA. That’s an entire year of working for nothing. How is there not some sort of stipend for us pathetic Master’s students who went straight from undergrad to grad and haven’t amassed some sweet nest egg from a few years of working? Finally, the icing on the cake was my car, which I just had serviced, literally died in middle of the road at two am last  night. How is it feasible for me to possibly cover repair expenses? I won’t know until tomorrow what happened to the car, but everyone seems to think it’s the transmission which translates to me as $$$$.

I’m lucky enough to have parents who can catch me as I fall, but sometimes you can just feel overwhelmed.

OK. Rant over.

So, when one is feeling stressed and dealing with a lot of stuff, who the heck wants to worry about cooking/cleaning/fretting over having healthy food ready-to-go? 

I’ve got a fantastic recipe for homemade protein bars that are gluten free, vegetable oil free, (almost) sugar free, and dairy free. Even in rougher times like these, I get a little bit excited when I can grab and run a healthy and delicious snack. They are the perfect thing before lunch and dinner to tide me over.

1 cup (I soak my oats beforehand) oats
1 cup dried fruit (I use less, ergo less sugar)
1 cup almond butter
1 cup honey (again I use less, to decrease the sugar)
3 scoops protein powder (I use perfect fit which is vegan, gluten free, and sugar free)

Combine the honey and almond butter together in saucepan on medium heat. Once it gets all melty and combined add in the rest of your ingredients and stir. Once all the ingredients are well-mixed, pour the mixture (it should be quite thick) into a 9×9 type container and leave in the fridge. Voila! It makes twelve bars.
